This salad combines quinoa with 2 of my other favourite ingredients, roasted beetroot and marinated feta. Marinated feta makes everything taste better! I love adding it to salads, or simply crumbling over steamed veggies with a little grated lemon zest.
Combining chia seeds, the highest plant source of omega fatty acids, and salmon ensure this meal is packed with essential fatty acids. Asian greens are rich in vitamins A, C & K, as well as a good source of potassium and calcium.
This soup is perfect for vegetarians as combining legumes (chickpeas) with a whole grain such a quinoa makes this a complete protein and therefore a balanced meal. This recipe is perfect for freezing, why not make some extra and have it on hand for an easy mid-week meal!
