I love this green smoothie as a post run recovery drink. The coconut water and banana are both excellent sources of potassium, which as an electrolyte assists in retaining fluid balance in your body’s cells. The coconut water is also excellent for rehydrating, especially important in this summer heat. Both carbs and protein are also needed for recovery after a hard workout. The banana is a great source of carbs, and I like to add a scoop of protein powder to aid muscle recovery. Throw in some greens to add a serve of veg and the mint leaves give it a delicious zing!

Serves: 1
  • 1 peeled and sliced frozen banana
  • 1 tablespoon pea protein powder (optional)
  • 300ml coconut water
  • 40g baby spinach leaves
  • Handful fresh mint leaves
  1. Place all ingredients except spinach and mint in a blender and blend until well combined. Add spinach and mint, blend again until smooth and creamy.
I like to use pea protein powder, but feel free to use any type of protein powder you like. If you do use a milk based protein powder, the smoothie is no longer vegan and dairy free.
