These delicious baked breakfast oats taste like a dessert but are a healthy and balanced breakfast. Combining wholegrain oat, fruit and seeds they contain 23g protein and 8g dietary fibre per serve. Perfect for cooler weather or on the weekend when you have a little more time.

1 banana

1 egg

70g rolled oats

1 tbs LSA

2 tbs protein powder

1 tsp baking powder

½ tsp ground cinnamon

80ml milk of choice

½ cup berries of choice, plus extra to serve

1/3 cup Greek yoghurt, to serve
Method
1 Preheat oven to 180°C. Lightly spray two 250ml (1 cup) capacity ovenproof dishes with olive oil and place on a baking tray.
2 Place banana, egg, oats, LSA, protein powder, baking powder and cinnamon into a small food processor or blender and process until well combined, keeping some texture. Gently stir in berries.
3 Divide mixture between prepared dishes. Bake for 20-25 minutes or until golden and just firm to touch. Serve topped with yoghurt and extra berries. Best eaten warm.
Tips/hints
You can omit the protein powder and replace with 3 tbs almond meal.
