Hot apple & ginger toddy

Nothing beats a hot apple toddy on a cold winters night. Some strips of orange or lemon zest are also a nice addition.

Ingredients

  • 500ml apple cider or sparkling apple juice
  • 1 cinnamon stick
  • 3cm piece ginger, peeled, sliced
  • 3 cloves
  • 1 tbs honey
  • 120ml brandy
  • Lemon juice, to taste

Method

1. Place cider, cinnamon, ginger and cloves in a medium saucepan and heat gently for 5 minutes, to infuse the flavours.
2. Place 1 teaspoon honey in the base of each glass, top with 30ml brandy and the hot apple cider. Add a squeeze of lemon juice to taste.
